Les
nitrates en
question :

« Les deux seuils – 5 mg par kilo de poids corporel et 50
mg par litre d’eau de boisson – semblent animé d’une
vie sociale propre. Les
données récentes sur l’innocuité
du nitrate chez l’homme et l’animal d’expérience n’y
changent rien. Pourquoi ?
Les experts constituant
les comités sont à l’évidence parfaitement informés. Et ils ne
conseillent pas de supprimer la dose journalière admissible et le seuil
de potabilité de 50 mg qui en découle,
parce qu’ils ne peuvent le faire. Imaginons que,
demain, ils annoncent que
<l’eau est potable quelle que
soit la concentration des nitrates qu’elle
contient> et encore qu’ < une feuille de laitue de 25g
contient autant de nitrate qu’un litre d’eau prétendument dangereuse>.
Les réactions des mouvements écologistes, en France mais surtout
en Europe du Nord,
seraient d’une violence politique décisive. Les engrais, dont le
principal principe actif est justement
les nitrates, sont leur cheval de bataille juste après le danger
nucléaire. Et la population
y est grandement sensibilisée.
Et il y aurait aussi un problème de cohérence : comment
annoncer qu’il y a eu
il y a trente-cinq ans erreur, parfaitement compréhensible au demeurant compte tenu des connaissances à
l’époque, que cette erreur fut répercutée en chaîne par des comités,
par des instances européennes, par les instances nationales, par les
tribunaux, par les médias.
Il y aurait aussi un problème juridique insoluble.
Comment annuler les directives, les décrets, les circulaires tant
européens que français ? Et
qu’en serait-il des jugements ?
Faudrait -il faire rembourser
les subventions, les indemnités ?
Les scientifiques font
partie de la société, et en tant qu’experts des institutions. Leur
dilemme est simple ; soit par amour de la vérité scientifique, répandre
une information scandaleuse car à contre-courant des
convictions de beaucoup, soit
confirmer discrètement une fiction tout à fait inoffensive, car
somme toute il n’est pas nécessaire pour la santé publique que l’on
boive de l’eau nitratée.
Donc il faut persévérer dans l’être et continuer à faire
comme si l’eau contenant plus de 50 mg par litre était à peine
potable, et celle à plus de
100 mg par litre pas potable du tout. Même si le contraire est scientifiquement démontré. Mais, puisque tout est ainsi pour le mieux dans le meilleur des mondes possibles, pourquoi en parler ? Car le dossier des nitrates est exemplaire de ce que la prétention de la science à dire le vrai universel est de plus en plus contestée, entre autres à cause de l’évidente symbiose du scientifique et du politique et de ce qu’un fait social puisse perdurer au-delà de ses causes » [Mariam APFELBAUM]

L'Europe accorde une dérogation à la règle communautaire aux Pays-Bas et sauve 50 % de l'élevage intensif Les Pays Bas avait introduit un recours contre la directive nitrate en démontrant que celle-ci ne prenait pas suffisamment en compte les conditions pédoclimatiques locales.

Réaction : « Sur le fond, il ne faudrait pas longtemps aujourd’hui pour que soit tranchées officiellement et sur la base d’arguments scientifiques irréfutables différentes questions : - innocuité totale des nitrates, sinon interdiction de la production et de la vente libre des légumes, ce qui entraînerait une grave erreur de politique sanitaire, (la promotion du dernier livre des Dr L’hirondel peut être renforcée !) - impact nul des nitrates sur l’eutrophisation des eaux douces et marines aux concentrations courantes observées dans les écosystèmes européens (« masses d’eau » de la loi cadre ?) Par conséquent nous ne sommes pas dans l’inexactitude ou la nuance, mais bien dans l’erreur profonde, grave et irrémédiable. Ce qui est proprement sidérant, c’est l’attitude constante de crispation des autorités françaises et européennes et leur refus sous différents prétextes, tous plus futiles les uns que les autres, d’aborder le réexamen sur le fond de cette question. Que cette erreur soit coûteuse, inutilement contraignante et qu’elle participe à une formidable diversion collective, ne semble guère gêner nos technocrates, qui font plus dans la pseudo analyse psychologique que dans la juste appréciation des politiques publiques. Même la notion d' « intérêt pour la sensibilisation du monde agricole aux problèmes environnementaux » qui reste le dernier argument parfois avancé, pour maintenir le statut quo, n’est pas soutenable : comment « sensibiliser juste » sur un faux problème avéré, qui génère en outre des contraintes et des dépenses publiques et privées, aussi lourdes qu’injustifiées. Cette fumeuse « sensibilisation » risque fort de se retourner contre ses propagandistes, lorsque la vérité sera comprise du plus grand nombre ! Et la synthèse sur la chimie de l’environnement ne devrait pas tarder à être comprise... »
